Kuentz-Bas Pinot Noir Alsace France 🇫🇷 2017
Founded in 1795 by the Kuentz family, later connected to the Bas family in 1895 by marriage, Maison Kuentz-Bas has been making wine in Alsace for more than 200 years. This Pinot Noir is made from 25 to 35 year old vines grown in a clay and limestone soil. Fermented and aged in foudre (large wooden barrel), the wine is then bottled unfiltered, then and to rest for one year before being released.
This Pinot Noir is bright and juicy. Aromas of pomegranate, strawberry and cranberry exudes from the glass. Supple tannins accompanied by hints of savoriness and earthiness. A splendid Alsatian Pinot Noir.
This Pinot Noir can easily pair well with these two dishes, but if I had to pick a winner, the prize would goes to pork sandwich. Why? Because the spices and the soy sauce of the pork sandwich sings harmoniously with the Pinot Noir

這瓶來自法國阿爾薩斯的黑皮諾,是在這法定產區裡唯一能被種植的紅葡萄品種。阿爾薩斯產區緯度高於布根地,但由於Vosges Mountains(弗日山脈)座落於產區的西邊,阻擋了所有水氣的來源,成就了雨影效應(rain shadow effect),造成阿爾薩斯夏季氣候乾燥炎熱,所種植出來的黑皮諾成熟甜美而多汁; 嚐起來較布根地的黑皮諾更平易近人。
這瓶黑皮諾搭配起豆瓣魚及豬肉三明治是恰恰當當,有過之而無不及。辣辣的豆瓣魚配上鮮甜清爽的黑皮諾,不僅中和了辣味,還帶出了辣豆瓣醬汁裡的酯味,好生迷人。搭配鮮魚完全沒有令人不悅的鐵鏽味,打破一般人對白魚只能配白酒的迷思!
大廚做的豬肉排三明治是中式醬油口味的,鮮嫩多汁,叫人一口接一口。流淌的肉汁與醬香與黑皮諾是十指緊扣、水乳交融。輕盈的酒體伴著爽脆的酸度,洗盡肉排的油膩感,而後提出的鮮甜及辛香,是令人激賞與讚嘆的完美的餐酒搭配。
