Hello everyone! ​Here comes my 5th food and wine paring video! ​

Have you ever had or heard of Mai-bing before? Mai-bing is a traditional dish originated in Zhejing province of China. A true specialty to the region. In this video, my very good friend, Arial Chou, the creator of Soft Structure 刺蝟的柔軟密室, will show us how to make Mai-bing. As usual, I will pick a few wines that would go very well with Mai-bing. Full Recipe Provided by Arial Chou / 完整食譜由 Arial Chou 提供

Ingredients/ 材料:

  • 1 package of flour tortilla|市售墨西哥餅皮(麵粉製) 1 包

  • 1 cup of chopped Chinese pickled mustard greens |切成小塊的中式酸菜 1 杯

  • 1 pound of ground pork|豬絞肉 1 磅

  • 1 package of silken tofu, cut into 1” cube|嫩豆腐 1 盒,切成小塊

  • 1 tbs soy sauce|醬油 1 大匙

  • 1 tbs Cooking Michu|米酒 1 大匙

  • 2 tbs vegetable oil|蔬菜油 2 大匙

  • 3 garlic clove, minced|蒜末 1 大匙

  • 1 small nob of ginger, minced|薑末 1 大匙

  • 1 red chili, sliced (optional)|辣椒 1 小條,斜切成小段(可加可不加)

  • Pinch of ground white pepper|白胡椒粉少許

Direction/ 做法:

Step 1: 

Add soy sauce and rice wine to the ground pork to marinate. Mix well and set aside for 15 minutes. Soak and wash Chinese pickled mustard greens in cold water for 3 minutes. Drain, then chop the Chinese pickled mustard greens into smaller piece.

將醬油、米酒加入豬絞肉中拌勻,靜置15分鐘備用。將中式酸菜泡在冷水中清洗,大約 3 分鐘左右。洗好後將水份瀝乾,將酸菜些成小塊備用。

Step 2: 

Warm up the frying pan over medium heat, add oil, then minced garlic, ginger and chili in the pan. Add the ground pork to the pan and sauté till there are no lumps. Add minced tofu into the pan when the meat is cooked halfway through. Stir fry the mixture a little more. Then add chopped Chinese picked mustard greens into the pan. Continue to stir fry until the meat is fully cooked. Sprinkle with ground white pepper, then the filling is done.

用中火熱鍋,熱好鍋後倒入蔬菜油,將蒜末、薑末及辣椒爆香。將醃好的豬絞肉倒入鍋中,拌炒均勻,直到沒有結塊。當絞肉炒到半熟時,加入切碎的豆腐拌炒一下,然後再加入切成小塊的中式酸菜到鍋中,持續的翻炒,直到肉熟透入味,再撒上白糊椒粉,餡料就完成了。

Step 3: 

Warm up the tortilla, both side, in the pan with low heat. Spread the filling onto the warmed tortilla and roll it up. Now, enjoy it like a burrito.

將墨西哥餅皮放入鍋中,用小火熱一下,兩面都要熱一下喔!將餡料放在熱過的餅皮上,捲成一捲,可以像吃墨西哥捲餅一樣拿起來吃。

We always eat Mai-bing with a bowl of congee on the side. This is our traditional way of eating Mai-bing. Just wanted to share with you all. Mai-bing can be served during lunch or dinner.

我們家吃麥餅的時候,通常會配著粥一起吃。這是我們家特有的吃法,分享給大家。麥餅也可以當作正餐享用喔!
