Ingredients/ 材料:

  • 2 slabs of pork belly (about 1 inch thick, with or without pork skin)|2條厚切五花肉 (約1英寸厚,帶皮尤佳)

  • 4 tbs salt |鹽 4 大匙

  • 4 cloves of garlic, sliced|蒜頭 4 瓣,切片

Marinate the pork/醃製豬肉:

Step 1: 

To start, make sure the pork bellies are dried thoroughly with paper towels. Rub the pork belly with salt on all sides. Make sure salt are evenly distributed on the pork. Do not afraid to over-salt the pork.

首先,用紙巾把肉擦乾,越乾越好。將鹽均勻地抹在豬肉上,每面都要抹到。可稍微按壓,讓鹽附著在豬肉上。根據我個人自己的經驗,要把肉的每一面都扎實的抹上一層鹽。我自己抓的份量是抹完後,摸豬肉的時候手指能明確的感受到鹽粒的程度就差不多了。

Step 2: 

Cut some slits on the meat and stuff garlic slices into them. Put the pork into Ziplock bag or airtight container. Put the remaining sliced garlic into the bag if there is any left. Leave the bag in the fridge at least for 3 days, but no more than a week.

用刀劃出一些縫隙,把蒜頭切片塞進縫隙中,這樣就把肉醃好了。把醃好地五花肉放入密封袋中.放入冰箱冷藏.冷藏最少 3 天,多至一個禮拜。

The Simplest Way to Enjoy Hakka Slated Pork: Boiled/ 最能展現出客家鹹豬肉原汁原味的吃法:川燙

Direction/ 做法:

Take out the pork and thinly slice the pork into 1/5 inches. Put the sliced pork in boiled water. When the pork is cooked through, drained the pork and the dish is done.

The traditional way to enjoy Hakka Salted Pork is to dip the sliced pork in Hakka Kumquat marmalade, with a little bit of soy sauce. This dish can be served as an appetizer or side dish. There are many different way to enjoy Hakka Salted Pork, like Chinese Picked Mustard Green Pork Soup, Twice-Cooked Pork, or Stir-Fried Pork with Green Leafy Vegetables, just to name a few.

*A friendly reminder: while cooking with Hakka Salted Pork, do not over-salt the dish since the Hakka Salted Pork is heavily salted during the marinate.

把醃好的肉取出,切成薄片,約1/5 英吋厚,燒一鍋熱水,川燙肉片。肉片熟了之後將肉取出瀝乾。這道菜就完成了!客家傳統的吃法是沾客家桔醬.可以只用桔醬或是桔醬加一些醬油來沾著吃,都是很常見的吃法。這樣就是一道簡單的前菜或配菜。鹹豬肉也很適合做成其他料理。常見的菜色是將肉片加在福菜湯裡變成福菜肉片湯,也可以做成回鍋肉,或簡單的豬肉炒時蔬。

*一個貼心的小提醒:在烹調這些菜式的時候,要記得肉本身已有一定的鹹度了,所以在調味的時候,下手不要太重囉!
