Chef used tortillas to make two different brunch dishes. One is a traditional Taiwanese style omelet; the other one is a Mexican style quesadilla with popular brunch items. 

I picked Hild Elbling Sekt, a German sparking wine made from Elbling grape to pair with these dishes. The outcome was beyond my expectation.

Elbling, originating from Germany, is one of the oldest white grape varieties in Europe. Once the country’s most cultivated variety from medieval time untill the early 20th century, Elbling has since fallen out of favor. With its neutral flavors, high acidity and low alcohol content, Elbling is an ideal candidate for sparkling wine. 

This Elbling Sekt is refreshing, juicy and joyful. Yellow rose, honey, apricot and Meyer lemon on the nose; its racy yet balanced acidity calls for food. It’s like Riesling’s little sister without the flinty note. It would be perfectly fine sipped on it own but the pairing with these two dishes is just delightful.

Along with asparagus and spicy food, an egg is considered one of the most challenging ingredients to pair with wine but this is not the case today. This Matthias Hild Elbling Sekt served as a wonderful example of breaking the concept and played a remarkable role in this particular food and wine pairing.

這瓶氣泡酒是由歐洲最古老的白葡萄品種之一 Elbling 釀製而成。在中世紀時,Elbling是德國覆蓋面積最廣的葡萄品種,種植面積卻在20世紀初時大量銳減。Elbling 以其強勁的酸度,極低的酒精濃度而聞名。釀製出的酒味道淡雅溫潤,非常適合拿來作氣泡酒。這瓶 Elbling 氣泡酒,價格平易近人,原以為清爽淡雅,實則不然。陣陣的黃色玫瑰,伴著蜂蜜,杏桃及甜檸檬的香氣撲鼻而來。入口後,爽脆的酸度在舌尖跳動,有著麗絲伶的風采卻沒有硝石味,好生怡人。非常適合在春夏的午後來上一杯。搭配著大廚做的這兩道早午餐實在無從挑剔,好一個完美的餐酒搭配。是一瓶酒搭兩種不同餐點的極佳展現。
