This organic Avinyó vintage Cava is made using méthode traditionnelle (going through a second fermentation in the bottle just like Champagne does). With 100 % free run juices pressed from the regional indigenous grapes: Parellada, Xarello and Macabeu, it is aged on the lees for about 20 months before being disgorged. It’s delightful with lively acidity, green apple, Bosc pear, and lemon zest with salinity and a hint of creme fraîche both on the nose and palate. 

For me, Cava is a great alternative to Champagne. Not only it is budget friendly but it actually has a lot to offer. A great Cava can pair with any kind of seafood from canned sardines to fresh roasted Bronzino, or just simply enjoy it as is. There are lots of great Cava producers in the market, go explore and you might fall in love with Cava before you know it.

西班牙的卡瓦氣泡酒,依照法規,得採用傳統香檳釀製法來製作(即瓶中二次發酵法)。做出來的氣泡酒飲用起來與香檳類似,除了擁有綿密細緻的氣泡之外,還帶有淡雅的酵母、優格或烤布蕾雷的香氣。然而,卡瓦使用的是當地的葡萄品種來釀造,再加上風土條件迥異,釀造出的氣泡酒自然是有別於香檳。對我來說,她們都是獨一無二、自成一格、各自亮麗。

這瓶卡瓦品來清新宜人,如沐春風。洋溢著滿滿的青蘋果、西洋梨、檸檬的風味。慕斯般的氣泡在口中華麗的展開,柔和的酵母及優格如落幕緩緩降下,畫上句號。搭配以海鮮組合而成的菜餚是畫龍點睛,妙不可言!
